But this time I choose lemons and it was the best one I had so far. The perfectly baked Lemon Cake slice.

Instructions
  1. Preheat oven to 180 degrees C. Butter a loaf pan. Line it with parchment paper. Keep aside.
  2. In a large mixing bowl, beat butter and sugar till smooth. Add one egg at a time and beat every time you add an egg.
  3. Add the lemon juice and beat again.
  4. Seive all purpose flour, baking powder and salt into the butter mixture. Add the lemon zest, and vanilla essence, mix with help of spatula using cut and fold method.
  5. Pour the batter into the prepared loaf pan. Bake in a preheated oven for about 50-55 min or till the toothpick inserted in the middle comes out clean.
  6. To prepare the glaze, in a medium bowl add the icing sugar and gradually add the lemon juice till the glaze is spreadable.
  7. Spread the glaze evenly on the warm cake. Let it cool completely. Cut the dark brown sides of the cake (if any). Cut them into slices and serve with a cup of hot coffee. 🙂
